Maybe what Socrates is saying is that one needs to have beginning or a start to discovering or forming a personality, or set of beliefs.
Just as a small child, the guardians at first weren't ready for the truth of the world. So filtering out what one would consider "unfit" or "uncomprehendable" would be the easiest way to have someone begin to think for themselves, just as it is easier to study and learn less information rather than more, but in the long run that person would ultimately know less. The idea of filtering is to get a person or people used to thinking or creating judgement. Then will someone be able to take on the vast realm of truth and information and from there will form their own opinions and judgements.
The guardians need to be able to know and handle the truth, but laying the truth on them at once would do nothing but cause an overload amongst them, creating differing opinions without even having a base moral. Only from having a base moral will one be able to build off of and learn.
It is as simple as starting off slow, then picking up speed as you get used to things and know what to watch or listen for. Only through time and experience will anyone truly get used to anything. All music is good music in a sense that it every song, note, or instrument does something important to at least one person. One could listen to "post-hardcore" and not understand any aspect of it, but if one starts off liking music that similar details, then eventually, through listening to and understanding more music will "post-hardcore" become more clear.
